Ok, our new Fifth Crow Farms CSA box arrived today and I will post a menu plan on Sunday, but last week’s box is almost gone and I was pretty proud of how I used it, so let me share!
In our CSA box last week, we found Cabbage, Curly kale (3 heads!), Fennel, Carrots,Summer squash, Escarole, Strawberries, Hutterite dry beans and Sage.
Here is/was our plan for the week of July 1:
Monday: Meatloaf with caramelized cabbage, sautéed kale, braised carrots
Tuesday: Chicken and green beans stir fry with quinoa
Wednesday: Sous vide pork ribs with spicy apple BBQ sauce, braised escarole with boquerenos and garlic (also, I subbed chili garlic paste for Calabrian peppers), slow cooker Boston baked beans (used Cranberry beans from Fifth Crow), Eclair Refrigerator Cake from America’s Test Kitchen
Thursday: Roasted salmon, quinoa and rice, carrot and kohlrabi slaw
