Cross Country is over and Basketball is starting. One sport to another, that’s how we roll.
This week we have two basketball games, plus a little travel and maybe a class or two. The menu plan will likely include a couple dinners out, or if I am really prepared, a slow cooker recipe with leftovers.
In our vegetable box from Fifth Crow Farms, we found Sugar Pie pumpkins, Shallots, Carrots, Baby head lettuce, Red potatoes, Thyme, Chard, Brussels Sprouts, Broccoli and Cauliflower. The Cauliflower went into a Cauliflower Cake for Thanksgiving, and the Brussels Sprouts were used in a salad the same day. The pumpkins, shallots, carrots and potatoes will keep nicely on the counter and in the fridge, no rush on using those. Makes it a little easier to use this week’s box.
Here is my menu plan for the week of November 26-December 1:
Sunday: Pizza, high-heat roasted broccoli
Monday: Slow Cooker Beef Stew (from The Best Slow & Easy Recipes, Cook’s Illustrated), salad
Wednesday: Take out before basketball game
Thursday: Indian spiced cauliflower soup, naan, rice
Friday: Takeout and Trashy TV
