My CSA Box: Menu Plan October 15-20

Our box from Fifth Crow Farms contained Red Kabocha winter squash, Red onions, Turnips, Summer squash, Melons, Basil, Arrowhead cabbage, Arugula and Beefsteak tomatoes. These were end-of-season tomatoes, so I stuck them in a low oven with olive oil and S&P to roast them for use this week. Mid-semester, I am feeling a little tired of planning my weekly menu, so I am going to keep it short and simple this week.

Here is my menu plan for the week of October 15-20:

Sunday: Cabbage, broccolini and carrot stir fry with chicken

Monday: Roasted tomato risotto (in the pressure cooker), grilled sausages, green salad

Tuesday: Taco Tuesday

Wednesday: Pappardelle with Chicken and Pesto

Thursday: Roasted turnips with ginger and honey, pork meatballs, sautéed cabbage

Friday: TGIF!
