Our vegetable box from Fifth Crow Farms is definitely moving towards fall with Purple potatoes, Green Zebra tomatoes, Baby kale mix, Poblano peppers, Strawberries, Yellow onions, Green beans, Fennel, Thyme, and Baby lettuces. I am looking for a couple short cuts this week for dinner, just to make my life easier, so I am incorporating a couple items I found on the last trip to CostCo including Hodo Soy Sichuan Mapo Tofu and Koilbassa Smoked Beef Sausage.
Here is my menu plan for the week of September 10:
Saturday: Whole Black Cod from Real Good Fish roasted with onions, fennel and cherry tomatoes (photo above)
Sunday: Italian-stuffed poblano peppers with kale, stuffed pasta shells with ricotta and spinach, chocolate cream pie
Monday: Sichuan Mapo Tofu with ground beef, rice, green salad and sliced tomatoes
Tuesday: Turkey Taco Tuesday (yes, I love this alliteration), plus Slow Cooker Vietnamese-Tacos for a friend
Wednesday: Slow Cooker Polish Sausage and Cabbage Soup
Thursday: Back-to-school night, dinner on the fly
