With our holiday week and only four days to deal with, one would think it would be easy to throw a menu together. But here I am, Monday night, playing catchup.
In our Fifth Crow Farms CSA box this week, we found Yukon Gold potatoes, Early Girl tomatoes, Baby lettuce mix, Green cabbage, Parsley, Green beans, Mollie’s Delicious apples, and King City Pink dry beans. Here is my menu plan for the (short) week of September 3:
Monday: Labor Day BBQ with New York Steaks from Costco, Potato Salad Vinaigrette, steamed green beans, sliced tomatoes
Tuesday: Vaguely Vietnamese Pork Tacos with slaw, steamed green beans
Thursday: Cabbage risotto, grilled pork chops, green salad
Friday: TGIF! And Back-to-School cocktail party.
