I thought the post title deserved an exclamation, the kids are back to school this week. Yeah!
However, now we have to deal with cross country practice, after school conditioning, homework, Boy Scout meetings, and various other activities using our time. I look forward to at least one of the kids driving soon.
Our CSA box from Fifth Crow Farms included Broccoli, Romaine Hearts, Carrots, Scallions, Basil, Thai Basil, Lemon Cucumbers, Early Girl Tomatoes and Strawberries. This was the week that a couple folks ditched their Basil, so I have three bunches, perhaps pesto is in the offing. Here is my menu plan for the week of August 27:
Sunday: Burgers with tomatoes, lettuce and pickles, Pickled Cucumber Potato Salad, corn
(Meatless) Monday: Chickpea Sloppy Joes, Broccoli and Quinoa Tabouli
Spring rolls with shrimp and pork, Thai peanut noodles Noodles with fresh pesto
Wednesday: Shredded beef tacos with corn tortillas and pico de gallo
Thursday: Spring rolls with tofu, Thai peanut noodles
TGFI! And Labor Day weekend. Let the celebrating begin. So hot! Thai peanut noodles again (made a big batch of peanut sauce)
