My CSA Box: Arugula spaetzle

Our vegetable box from Fifth Crow Farms CSA contained Beets, Cauliflower, French Breakfast Radishes, Baby head lettuce, Kale and Arugula. I traded the Beets for a beautiful head of Cabbage, half of which I used for our annual St Patrick’s Day dinner. Here is my family menu plan for the week of March 19:

Sunday: Grilled sausages, fried onions and cabbage, roasted cauliflower, arugula spaetzle

Monday: Dinner out after meeting

Tuesday: Taco Tuesday

Wednesday: Grilled chicken (Small Victories cookbook), roasted asparagus, steamed chard, herbed rice with tahdig

Thursday: Roasted salmon, rice, green vegetable (or two)

Friday: Either Pasta with Lemon, Herbs and Ricotta Salata OR Lemony Pasta with Chickpeas and Parsley
