My CSA Box: Pi and St Patrick’s Day

A week full of important holidays! Love this time of year, with fresh spring produce, warmer days and with the change of daylight savings, an extra hour at night. I think I am going to start taking post-dinner walks with my spouse, mini-date nights.

Our vegetable box from Fifth Crow Farms CSA included Hakurei Turnips, Parsley, Kale Raab, Baby Head Lettuce, Baby Kale, Collards and Arrowhead Cabbage. I used the Arrowhead Cabbage for a dinner on last week’s menu (Swedish Kalpudding), here is my plan for the week of March 12:

Sunday: Grilled steak, braised turnips, sautéed kale and collard greens, roasted sweet potatoes

Monday: Vietnamese-style spaghetti squash noodle bowls with leftover steak

Tuesday: Foolproof Pan Pizza (Pie) and Kiwi Lime Pie – should probably throw a salad in here too!

WednesdayChicken Mole in the slow cooker, refried beans (from scratch), tortillas, salad with oranges

Thursday: Real Good Fish

Friday: Takeout and Trashy TV

Sunday: St Patricks Day Feast – Corned Beef and CabbageColcannon,
