This year, I decided to hold off on starting any of my healthy eating and lifestyle goals until February, figuring it would give me time to enjoy January and a couple more Friday night pizza parties. Also, the Big Guy has gotten into making pancakes on Saturday mornings, with chocolate chips, and I think it is rude to turn down food from a teenager.
That being said, my “see food diet” must be curbed so this week we are back to our old favorites which utilize great local organic vegetables, high quality meats, no sugar or white carbs, and of course, more exercise.
Here is my menu plan for the week of February 5:
Sunday: Slow cooker pulled pork, winter vegetable slaw with cabbage, watermelon radishes and apples
Tuesday: Turkey and pork meatballs, Kale and Brussel Sprout Salad, cauliflower rice
Wednesday: Roasted chicken thighs with turnips and kohlrabi, Brussel sprout salad, roasted potatoes
Thursday: Real Good Fish of the week
Friday: TGIF and Takeout (I am guessing sushi this week)
