Summer vacation is almost here, school is almost out, I almost have my sh*t together. A girl can hope.
Our box from Mariquita Farms featured White Spring Onions, Summer Squash, Carrots, French Breakfast Radishes, Blueberries, Collard Greens, Red Butter Lettuce and Thyme. I ended up with two bunches of thyme. Humm, could I be clever and write about how nice it would be to have that thyme convert to time? No, I am not that clever.
My menu plan for the week of June 8:
Sunday: Grilled skirt steak from Freedom Meat Lockers; saute of summer squash, spring onions and thyme; carrots and radishes to snack, salad
Monday: Most likely, dinner out, because of a board meeting
Tuesday: Fajita night with flank steak, sautéed peppers and onions, guacamole, salsa (if this sounds like Taco Tuesday, you are right)
Wednesday: Dinner out
Thursday: Dinner out
Friday: TGIF! Take out and trashy TV
