Loved the holidays, starting in early November when I start thinking about what kind of pies to take to Thanksgiving, all the way to New Year’s Eve and making sure all of the new recipes I wanted to try, have been tried. Right about now, I am thinking about recovery and fresh starts for the new year. Also, eliminating some of the sugar coursing through my system! So, I am embarking on another clean eating challenge for the next 30 days, starting tomorrow, January 7. Until and including February 5, I will avoid all sugar, grains, legumes, alcohol, and dairy. I will eat a diet high in vegetables, lean meats and fruit.
Step one, as I learned from my last challenge in September, is good planning. With visits to the Farmer’s Market, Trader Joe’s, and CostCo, as well as my meat freezer with locally produced lamb, pork and beef, here is my menu plan for the week of January 7:
Sunday: Roast chicken, roasted sweet potatoes “fries”, sauteed spinach, kale salad with dates and almonds
Monday: Sausages, braised red cabbage, acorn squash and apple soup, kale salad with Asian pears and walnuts
Tuesday: Chicken braised in slow cooker, with lettuce cups, fresh salsa, guacamole; sauteed bok choy
Wednesday: Shepherd’s Pie with Sweet Potato Crust, kale salad with Asian pears and walnuts
Thursday: Roast beef, roasted carrots and cauliflower, spinach salad with blood oranges, fennel and walnuts
Friday: Dinner out
Saturday: Chocolate Chili, vegetables with cauliflower hummus, sliced fruit with almond butter (I am envisioning this will be a football-friendly menu while we watch the Packers vs 49ers)
Pretty darn kale-heavy, but I found this baby kale at CostCo that is organic and tasty. Plus it is easy to throw a couple handfuls in a bowl, add some fresh fruit from our Frog Hollow CSA box and toss with an easy dressing. And if it looks like I am cooking a lot of food, remember that I am planning for extras for breakfast/lunch the next day. The roast I plan to do tonight will hopefully provide lunches for the next several days. Making sure I have plans in place and enough prepared food helps me, as it is very difficult to figure out what to eat when you are hungry and the cupboard looks bare!
