Family Dinner Plan: Happy Halloween

Did you Boo your neighbors yet? Or co-workers? It is pretty fun, and there is still time!

Our box from Mariquita Farms featured Chard, Butternut Squash, Carrots, Broccoli, Anaheim Chiles, Early Girl Tomatoes, Leeks, Beets, and Heirloom Tomatoes. And of course we have a freezer full of local meat, so along with our slow cooker, I am hoping for an easy meal plan this week. The tomatoes are all going into sauce, while the Anaheim chiles are being roasted on the BBQ and made into a simple enchilada sauce for later.

Here is my menu plan for the week of October 28:

Sunday: Roasted Sablefish, stir-fried broccoli, roasted carrots, sauteed chard

Monday: Meat sauce with pasta/spaghetti squash, steamed broccoli

Tuesday: Grilled pork chops, roasted butternut squash, sauteed greens

Wednesday: Halloween!

Thursday: Butternut Squash Soup with Roasted Peppers and Tomatoes, grilled cheese

Friday: Takeout and Trash TV
