Family Dinner Plan: Cool, autumn nights

It is finally cooling down around here and I am going to be bringing out the slow cooker and pressure cooker this week for a couple fix-and-forget meals, and a couple throw-together-fast meals.

We are also reintroducing foods we gave up during the Whole30 challenge, to gauge our body’s reactions. So far, I don’t love how I feel after eating bread and sugary desserts at night (two nights in a row I have fallen asleep before 9:30pm), but the first piece of Cowgirl Creamery Mt Tam I had last night was pretty awesome. Must remind myself to stop at just one chunk!

Our box from Mariquita Farms contained Fresh Peanuts, Celery, Couve Tronchuda, Mixed Tomatoes, Baby White Turnips, Carrots, Beefsteak Tomatoes, and Cauliflower. The peanuts will go right into Chocolate-Peanut Spread from smitten kitchen, and the cherry tomatoes are destined for lunches and snacks. I may also make a batch of Celery Stew for my lunch this week.

Here is my menu plan for the week of October 14:

Sunday: Grilled flank steak, black beans with cilantro, tomato salad, roasted sweet potatoes

Monday: Leftovers from Sunday into Taco Night Monday

Tuesday: Roasted salmon, roasted turnips, carrots and cauliflower, roasted new potatoes, steamed couve tronchuda (I think I can do this, might have to saute)

Wednesday: Dinner out after soccer practice

Thursday: Caldo Verde (traditional Portuguese Soup with Couve Tronchuda), tomato salad

Friday: Take out and Trashy TV

    Thank you for such a great article! I’ve had chronic constipation my entire life. Since switching to Primal and FODMAP I’ve seen a little bit of improvement. I’m starting to think that my problem is with fiber in general. It seems that I can only tolerate fiber in small amounts, even soluble fiber, like a few slices of fried plantain. A few weeks ago I ate a few servings of boiled yams and tannier and got a lot of pain in the lower abdomen. I’ll keep experimenting.
