Family Dinner Plan: Post-holiday short week

Happy day-after-Labor Day! Hope you all had a relaxing weekend full of lots of healthy, outdoor activities.

As we move quickly into this short week, I need to pull together a fast menu; our box from Mariquita Farms has some good basics this week. Tomatoes, Cherry Tomatoes, Yellow Onions, Swiss Chard, Apples (apples! Must be fall already), French Tarragon, Sweet Peppers, and Lettuce. The peppers and onions came along just as I was whipping up a batch of spicy pineapple chili last week. All that went in the freezer for future, hectic fall weeks. Here is my menu plan for the week of September 4:

Monday: Holiday BBQ

Tuesday: Roast chicken, roasted beet and tomato salad, grilled green beans and padron peppers, roasted potatoes and onions

Wednesday: Dinner out after soccer

Thursday: Braised chicken tarragon (with chicken thighs), braised chard, roasted potatoes

Friday: Takeout and Trashy TV
