Family Dinner Plan: Dust off the slow cooker

First full week of school, plus soccer practices for all, so I plan to bring out the slow cooker at least once this week. And Mariquita had a special Ladybug delivery of San Marzano tomatoes last Friday, so after canning the bulk of them, I will use the rest in a sauce. Ooh, maybe a nice Bolognese with local ground pork and beef!

In addition to the Padron Peppers pictured above, our box from Mariquita Farms contained Red Beets, Early Girl Tomatoes, Green Beans, Lacinto Kale, Jalapeno Peppers, and Mixed Cherry Tomatoes. The cherry tomatoes are great for school lunches, if they last that long, and I will make Kale Chips for snacks.

Here is my menu plan for the week of August 26:

Sunday: Mayfield Cafe roasted chicken dinner

Monday: Slow-Cooker Bolognese with whole wheat pasta, salad, green beans

Tuesday: Leftovers

Wednesday: Dinner out on the way home from double soccer practice

Thursday: Roasted salmon, roasted beet salad, grilled summer squash

Friday: Takeout and Trashy TV!
