Family Dinner Plan: Happy July 4th!

After a long hiatus, I am back to writing. Even cleaned up my desk for the occasion!

Our box from Mariquita Farms included Summer Squash, Green Beans, Lettuce, Chioggia Radicchio, Red Onions, Strawberries, Cauliflower, and Carrots. By chance, we ended up with 3 extra boxes this week, so the strawberries are going into jam and the green beans might be dillied. Red onions and carrots both hold well for future use.

Here is my menu plan for the week of July 1:

Sunday: Radicchio and Cauliflower salad, Green Bean and Potato salad, grilled Bison steaks, coconut cream pies

MondaySummer Squash Soup with Parsley Mint Pistou, grilled cheese sandwiches

TuesdaySummer Squash Sloppy Joes, carrot sticks, lettuce salad

Wednesday: July 4 BBQ – marinated skirt steak, pot ‘o beans, roasted/grilled radicchio

Thursday: Leftovers

Friday: TGIF Block Party – the sloppy joes may make a return appearance for our Friday night bash. Easy to feed a crowd, and the kids love them!
