Family Dinner Plan: Week-old greens

Last week we had a big box of veggies from Mariquita Farms. Because of our crazy schedule last week, we still have a pretty big box of veggies from Mariquita Farms, but some of the greens are looking limp and wilted. Many I can revive with a cool water bath in the salad spinner, but I think my menu plan better have a couple dinners in mind to use up these vegetables. Only 2 more weeks until we start the new season of veggie CSA with Mariquita!

Here is my menu plan for the week of March 4:

Cookie of the Week: Peanut Butter-Chocolate Chip (sort of forgot to make these last week!)

Sunday: Pizza party with soccer team after first game

(Meatless) Monday: Green Potage Soup, from Barbara Kafka’s Soup cookbook. There are several recipes in here that look good, some with garlic and rapini, others with random greens from the fridge. I will be creative and serve this soup with bread and crunchy vegetables with ranch dressing.

Tuesday: Slow Cooker Bolognese Sauce, pasta, salad with grapefruit and avocado

Wednesday: Leftovers

Thursday: Roast salmon, sauteed veggie, brown rice

Friday: Trashy TV and Take Out
