Family Dinner Plan: Holiday week + sports

A holiday Monday. The addition of a new sport on Thursday. I need a quick menu plan that I can prepare ahead of time and avoid the last minute scramble right before dinner, when I am driving carpools. I also need to save my strength for next weekend, as I think I will be up to my eyeballs in tomatoes fresh from Mariquita Farms Ladybug Buying Club. Stay tuned for more details on that project.

Our box from Mariquita contained Strawberries, Cheddar Cauliflower, Russet Potatoes, Escarole, Early Girl Tomatoes (which someone in our house eats like apples), Walla Walla Onions and Anaheim Peppers. I still have jalapenos from last week, I must get a salsa made!

Looking through the freezer, I discover I have 2 packages of chicken thighs (about 1 pound each), 3 pounds of ground lamb, 1 pound of ground beef, and a couple packages of fresh bratwurst. Also still have a few packages of oven dried tomatoes, which worked really well last week on Meatless Monday as a soup, and then again later in the week when I needed a quick tomato sauce for pasta. Let’s see what this week’s menu looks like:

(Maybe not Meatless) Monday: Mini-lamb burgers, escarole salad, cauliflower and ranch dressing, maybe a peach pie

Tuesday: Taco night (skipped it last week!) with fresh salsa, tomatoes and sour cream

Wednesday: Stuffed shells (ricotta, mozarella and spinach) with roasted tomato sauce, escarole salad

Thursday: Grilled bratwurst, wilted escarole with apples, spaetzle (channeling my inner German)

Friday: Movie night and takeout
