Time to get serious again. After taking the whole summer off from weekly meal planning, we are back to school this week which means back to a schedule. If I don’t do this, I spend valuable time during the week rushing around shopping and prepping for dinner when I could be doing important things like
painting my nails helping with homework and reading food blogs coordinating soccer carpools.
We continue to receive boxes from Mariquita Farms (through November, you can sign up now for the last 9 week session) and our box this week is super easy. In addition to strawberries, which we have had every week since the beginning, we also found a couple big Heirloom Tomatoes, Yellow Potatoes, Yellow Zucchini, Lettuce, Walla Walla Onions, Cucumbers and Padron Peppers. Cucumbers go great in school lunches, which we will be making this week. And everything else is fairly straight-forward to work with.
Here is my plan for the week of August 21:
(Meatless) Monday: Vegetable Tian, frittata with escarole, fresh whole grain bread (from Artisan Bread in 5), some yummy First Day of School dessert (Real dinner: Seared sous vide pork belly, escarole torta with hash brown crust, grocery store bread)
Tuesday: Meatloaf, salad with tomatoes, grilled zucchini, mashed potatoes –> Best Dinner of the Week!
Wednesday: Grilled lamb chops, spicy cucumber salad (cukes, walla walla onion, tomato and cilantro), couscous and watermelon
Friday: Movie night and take out – Padron Peppers for an appetizer with our margaritas!
What is your back-to-school plan? Any specials underway? I think next week, when soccer really begins, I will have to pull out the crock pot and pressure cooker!
