Family Dinner Plan: Parsnips, carrots and radishes

Our box from Mariquita Farms had French Breakfast Radishes, which I love. I find them milder than regular radishes from the grocery store and I especially enjoy them sliced with butter and salt on a baguette. Hum, maybe I just figured out tonight’s appetizer!

In addition to radishes, the box also contained Parsnips, Chantenay Carrots, Thyme, Lacinato Kale, Green Garlic, Escarole, Little Gem Lettuce, Rainbow Chard and Calçot Onions. I am going to stick with a Meatless Monday plan, like last week, and see if I can try a new recipe or two. I would also like to get the hang of Kale Chips, which everyone seems to be raving about. I scored two bunches of kale so I will see what I can do. And I seem to have an abundance of early onions (Baby Leeks, Calçot, etc) and I will see if I can incorporate them into something this week. I sense a soup night. Or two.

Here is my plan for the week of March 27:

Sunday: Chard souffle, Lentils with roasted parsnips and carrots, grilled steak

Meatless Monday: Gingered Carrot Soup with Wild Rice and Cranberries (from Whole Grains for Busy People, Sass), cheese bread, salad

Tuesday: Golden Pork Chops with parsnip saute, salad

Wednesday: Leftovers

Thursday: Rustic Farro soup with sausage and escarole (I am going to leave out the mushrooms, of course)

Friday: Meatloaf, Oat Pilaf with Carrots and Thyme (Whole Grains Everyday Everyway, Sass), salad
