Our first box of the season from Mariquita Farms arrived last Thursday, which leads me to think I will have to start posting my menu plans a little earlier. And maybe I won’t be able to call it my Monday Menu Plan anymore, since I will most likely post on Saturday or Sunday. Oh big changes around here, are we going to be able to keep up?
Our box was typical of late winter/early spring veggies, with a few surprises. Delicata Squashes were in the box, as well as Baby Carrots, Cilantro, Purple Top Turnips, Spinach, Calçot Onions, Winter Density Lettuce, Collard Greens and Baby Leeks. I used the spinach in a Green Garlic and Spinach Soup on Thursday, and the carrots were consumed as snack while waiting for dinner to be prepared. The Calçot Onions and Baby Leeks had me confused for a moment, until I looked closer.
But never fear, the tops tell us what we need to know!
Now that the onion situation is cleared up, here is how I plan to use my box this week:
Sunday: Calçot Onion appetizer, with Spanish dipping sauce; Roast turnips and Delicata squash; Quinoa with Asparagus and Preserved Lemon; grilled chicken Braised short ribs with egg noodles.
Meatless Monday: Vegetarian Chili from Frog Commissary Cookbook, corn bread, salad
Tuesday: Caucasus-Style Braised Pork Shoulder, mashed potatoes, Brazilian-style collard greens
Wednesday: Tex-Mex Roasted Lamb Ribs, grits, salad
Thursday: Wildcard day – depends on what needs to be used from the box
Friday: Leftovers or takeout, depending on the state of the fridge
