Monday Menu Plan: Short week, short menu

With a bag full of vegetables from the Mariquita Farms mystery box languishing in the fridge, I really needed to come up with a menu plan this week. Also, we are into full scale winter sports, so making sure I have something ready when we get home after a game is important to everyone’s sanity.

Here is my menu plan for the week of January 18th:

Tuesday: Chicken soup with escarole/radicchio and pastina (little pasta), bread

Wednesday: Baby back ribs in the slow cooker, coleslaw, potato salad, roasted beet salad

Thursday: Beans and greens with chard and sausage from Dittmer’s Wursthaus

Friday: Movie night and takeout
