Kitchen Kid: Ratatouille

Back again is our very own Kitchen Kid, sharing her thoughts on an item from last week’s menu plan. Enjoy!

Today I will like to tell you about:

RATATOUILLE

Kids will not think it is a good meal, because they won’t think some of the things in it sound good. There is eggplant, summer squash, tomatoes, and onions. If you have your children try it, they might think that the eggplant is the best part.

Here are the four things I like about ratatouille:

1.   The dish is good.

2.   The eggplant is good.

3.   It has thing I like in it.

4.   The pasta is great.

I made this recipe from my Victory Garden Cookbook, and while an excellent dish, it was complicated for a regular mid-week dinner for a busy family. I would suggest one of these recipes I found on Food Blog Search:

Olive Oil (recipe: Ratatouille)

Italian Sausages with Ratatouille

Oven-Roasted Ratatouille
