My Monday Menu Plan: Apples (and fall)

Fall is so here. Outside, the trees are shaking off their leaves and in the evenings, we notice the lack of crickets chirping. And it is cold! 57F this morning. Even the chickens were complaining.

Our box this week from Two Small Farms reflected the change in seasons, and included Lettuce, Spinach, Tomatoes, Gold Beets, Delicata Squash, Apples, Italian Parsley, and Strawberries. I picked a gorgeous globe Eggplant from our garden, and have a bunch of red peppers erroneously purchased for a recipe (wish I could blame that on the husband, but it is my own darn fault!) to use as well. Tonight, I plan to try out boneless pork chops from the 1/2 pig we purchased from TLC – more on the butchery process later.

Here is my menu plan for the week of October 4:

Monday: Grilled pork chops, roasted Delicata squash (might throw a pumpkin in there too), roasted beets, spinach and apple salad

Tuesday: Cauliflower Curry (I wanted to make this last week, but did not get to it), rice, salad

Wednesday: Ratatouille, pasta, salad

Thursday: Leftovers

Friday: Movies and takeout (or more precisely, I will be at BlogherFood 2010 and so the family has to fend for themselves!)
