My Monday Menu Plan: Pumpkin (already!)

Pumpkins are in season now, guess summer is over. Well, except not here, where we did not really have a summer. Tomatoes are just ripening, chilis are looking good, eggplants are almost ready, and I think I have a cucumber or two on the vine. But a Baby Bear Pumpkin did arrive in our box this week from Two Small Farms, along with Tomatoes, Carrots, Cilantro, Lettuce, Red Beets, Strawberries, (light) Gypsy Peppers and Cauliflower.

Here is my menu plan for the week of September 20:

Sunday: Morris Grassfed Beef Stew, with carrots, potatoes and onions, served with salad of lettuce and tomatoes

Monday: Cauliflower curry, rice, roasted beets (prepared the night before), salad

Tuesday: Leftovers

Wednesday: Sloppy Joes (from the freezer), tomato and pepper salad, fruit from Frog Hollow (TBD)

Thursday: Carrot soup, grilled cheese sandwiches, sliced tomatoes (we also found tomatoes in our Frog Hollow CSA box)

Friday: Movie night and leftovers or takeout (I say leftovers, since most Fridays I am too exhausted to cook, but for the last few, we have scraped together pretty tasty dinners from what we had on hand in the fridge. So, if we have good leftovers, then Friday will be a leftover buffet. If not, it’s takeout!)
