My Monday Menu Plan: Potatoes

This week is going to be busy, I have lots of writing planned and am getting ready to participate in the Foodbuzz Project Food Blog challenge. Why, you ask? Oh, I don’t know, I didn’t seem to have enough going on already. Snort.

Anywho, our box from Two Small Farms had several tasty goodies. Plus, last week, I didn’t exactly get to my eggplant, so I needed to use that as well. I will be working with Lettuce, Gold Chard, Bintji Potatoes, Summer Squash, Italian Parsley (well, not me, because I traded for more potatoes), Mei Quin, Honeydew Melon and Strawberries. And just a quick reminder about the Trade Box – it is for TRADING, not TAKING. You put something in you don’t want and trade for something you do want. It is not extra just because you are special. I think I need a sign.

Here is my menu plan for the week of September 13:

Sunday: Grilled Lamb Chops with smoked paprika, roasted eggplant raita and summer squash carpaccio (all from September 2010 Sunset Magazine) – if you are vegetarian, the eggplant raita with the summer squash carpaccio, and some pita or Middle Eastern flatbread from Trader Joes makes a great dinner!

Monday: Roasted salmon, roasted potatoes, steamed mei quin (very similar to baby bok choy), salad

Tuesday: Squash-rice casserole, salad, bread

Wednesday: Taco Night!

Thursday: Family Picnic at school, I will be eating leftovers. Or maybe chilaquiles with the extra tortillas and gold chard. I will not be eating pizza.

Friday: Movie and Takeout night
