Menu Plan Monday: St. Patrick’s Day

St. Patrick’s Day is here on Wednesday, and I will be able to indulge my love of corned beef. I am going to follow the Crockpot Corned Beef recipe I used last year, and fingers-crossed, there will be enough leftovers for the next day.

Here is the rest of my menu plan for the week of March 15:

Monday: Pasta e Fagoli soup (pasta with white beans), Bibb lettuce salad, sliced oranges

Tuesday: Orecchette with bacon and tomato sauce, sautéed Orach,

Wednesday: Crockpot Corned Beef with cabbage, carrots and mashed potatoes

Thursday: Leftovers or Pancake Night (very popular from a couple menus ago)

Friday: TGIF – takeout and movies

Follow up from last week – the Pasta with Asparagus Pesto was tasty, one kid liked it, one did not. It was very easy to make ahead, so I would make it again. And it might be nice as a summer salad, but then asparagus is not in season then. The Celery Root Salad from Simply Recipes was excellent, the green apple really made it work. But the Greens with Cannellini Beans and Garlic was just ok – I liked it, but then again, I like to feel as though I am eating healthy stuff. With brown rice, it made a great lunch. But it just did not work for the kids. And the Roast Chicken with artichokes on Saturday night was great, however, the recipe was a bit precious to follow. Brine for exactly 12 minutes! Puuleease…..

    My corned beef and cabbage is cooking away in the crock pot as we speak. We are enjoying ours tonight because there wasn’t another night this week to plan for it….and I certainly wasn’t going to pass it up. I serve mine with whole Yukon Gold small potatoes, carrots, cabbage and onions. It cooks in a mixture of beef stock and Guinness Stout…so good. Happy St. Patrick’s Day!

    Of all these amazing menu plans, the best sounding one to me right now is pancake night. Yum!

    you and my kids both! But, tonight’s corned beef and cabbage turned out great too, hard to believe I only make it once a year, seems a shame :-)

    Yikes, I don’t plan my menu, I just go with what I crave for each night and what my family wants–that means having a full pantry and freezer every week.
