		<description>I did think the menu sounded a little carb heavy, but who was I to comment! I would serve bread and roasted potatoes with every meal, if I thought I could get away with it!

Nice menu plan for the week - very Tex-Mex. Is that because of where you live, or just personal preference? I imagine you can get really nice ingredients, including chilis....</description>

		<description>I didn&#039;t clarify that those were 3 separate meals, and honestly, the only way I make it is due to the help of my hubby who works from home. He&#039;s making the Posole tonite.

We&#039;ll look into theh Rancho Gordo Hominy.

		<description>I have had good luck with the white bean soup recipes from Soup by Barbara Kafka, and even though it is not a slow cooker recipe, I think I am going to make Swiss Chard and Bean soup for tomorrow. Might even make it the long way, i.e. no pressure cooker!

Your dinner tonight sounds great - have you tried the Hominy from Rancho Gordo? I bought some at the Ferry Building Farmer&#039;s Market a while back, it was very tasty. I think you can order online.

BTW, how do you manage to cook such a complete dinner while working full time? I am impressed!</description>
