A few weeks ago, while touring Filoli and their Holiday Fair, I came across Shelley and her wonderful Chocolate Dipped Salted Caramels. Her Coconess is a brand new business, just started in 2009, right here in the San Francisco Bay Area, and as Shelley explains on her Facebook page, she makes candy confections and delicious gifts, all handcrafted and beautifully packaged, using only the freshest, natural ingredients – pure cane sugar, sweet organic cream, Madagascar vanilla bean and Belgian chocolate.
Most of the time, you can find her Sea-Salted Chocolate-Dipped Caramels, Almond Rocky Road with Cocoa Nibs, Original Peanut Brittle and Ancho Cayenne Peanut Brittle at the Santa Clara and Burlingame Farmer’s Markets (Saturday and Sunday respectively). She also has a Etsy site for those of you outside the Bay Area, and you can order online.
My favorite part about her salted caramels? She uses Australian Pink Flake Salt in the caramel, and then again, on the top after coated with chocolate. Wonderful taste and flavor!
