
What is wrong with you people? Don’t you know about Collard Greens? Super high in Vitamins A, C and K, manganese, calcium, potassium, iron, and rich in phytonutrients that are thought to fight off cancer, bacteria and infection? Good stuff, people, good stuff.
Yet, I ended up with 4 bunches of these greens from our Two Small Farms CSA drop on Friday. Lucky me.
Actually, that means that this week I can be super-over-the-top healthy*. Wonder how that will work for the kids
I did find a couple Collard Green recipes that looked good, using Foodblogsearch.com: Farro with Collard Greens and Bacon Salt, Collard Greens and White Bean Soup, and Spicy Black-eyed Peas and Collard Greens.
In any case, in addition to Collard Greens, we also found Lettuce, Cipollini Onions, Hungarian Peppers (I traded for Butternut Squash), Delicata Squash, Erbette Chard, Cilantro and Summer Squash in our Two Small Farms box this week. Here is my menu plan for the week of November 2:
Monday: Roast chicken, baked Cipollini Onions, roasted Delicata Squash Rounds, sautéed Erbette Squash
Tuesday: Leftovers
Wednesday: Vegetable and Ricotta Stuffed Collard Greens with Tomato Sauce (I will use summer squash and white beans), pasta, fresh bread
Thursday: Collard Greens with Bacon, grilled sausages, green salad
Friday: Take out – I will be at the First Annual Foodbuzz Conference, tasting all sorts of wonderful treats from San Francisco Street Food Vendors
I will make pesto with the cilantro – it is great to pull out in the middle of winter for a quick topping for roasted salmon or tossed with pasta for a side dish. And the butternut squash will be saved for a soup-something later this month.

* Somehow, I think cooking Collard Greens with copious amounts of bacon negates some of the nutritious benefits, but I could be wrong. I do know that most everything is better with bacon. Mummm, bacon.
