A couple weeks ago, we received hot cayenne peppers in our boxes, and if you recall my reply comment to Julie, you will notice that I punted on cooking them. I just did not have it in me to figure out a plan.
And this week, I have another chance to figure it out, only this time with Poblano, Serrano and Jalapenos.
Yeah.
Fortunately, our box also contained Red Torpedo Onions, Leeks, Baby Romaine Lettuce, Carrots, Mei Quin Choy, Strawberries, and Tomatoes. My first thought, salsa…
The fridge also has a number of items left from the last several weeks, including Cabbage, Red Potatoes and Sweet Potatoes. I am going to see if I can incorporate some of those items in this week’s menu.
Here is my menu plan for the week of October 12:
Monday: Turkey patties, mashed Potatoes, Salad, Carrot sticks (Happy Thanksgiving Canada!)
Tuesday: Leftovers
Wednesday: Roasted Salmon and Leeks, steamed Mei Quin Choy, brown rice, salad
Thursday: Mexican fiesta – Chips and Salsa, Enchiladas with black beans and sweet potatoes, salad
Friday: Depending on how I feel, I might try stuffed cabbage leaves! Here is one recipe, and another, and another.

Favourite cold weather foods at our house are oven roasted vegetables with sausages or chicken. . . So yummy!

oh, I am a big fan of roasted veggies (my kids mostly just love roasted carrots). I usually put chicken in, but sausages are a great idea. Do you roast those along with the veggies?
I was just trying to respond to your post about Coconut Chocolate Chip cookies, but I guess that post is too old to allow comments. I wanted to make coconut chocolate chip cookies for MY husband tonight, so I’m trying to decide between your recipe and one I found on AllRecipes.com–care to lobby for yours?
I always have problems with my cookies spreading too much, so if you can tell me that your cookies don’t spread AND have a good coconut flavor, you’re in!

As far as spreading, I recall they were big cookies and there was some spreading, but I think that worked out to be a tasty, crispy cookie.
I would definitely lobby for them!
They are in the oven now–I will let you know how they come out!
I ended up drying the cayenne peppers and I think I’m going to make buffalo sauce to go on chicken breasts later this week. I don’t know what it is…I didn’t grow up eating buffalo sauce, but it’s my junk food guilty pleasure. So if I can make it healthier by putting it on chicken breasts rather than chicken wings, I’ll be a happy camper!
Oh, and my favorite cold weather recipe is a white bean, smoked ham shank soup! Mmm…that’s comfort food!
