After a weekend of tomato canning, I am looking forward to a week of easy-to-prepare dinners. I have some fresh tomatoes to use, as well as our box of vegetables from Two Small Farms, which this week included San Marzano tomatoes, Cauliflower, Chantenay Carrots, Lettuce, Onions, Delicata Squash, and Sweet Peppers.
And without further ado, here is my menu plan for the week of Monday, September 7:
Monday: Roasted chicken with cauliflower and carrots, salad
Tuesday: Leftovers
Wednesday: (Frog Hollow Farms is going to be here for a tasting) Roasted Pepper and Tomato sauce, whole grain pasta, grilled sausages
Thursday: Delicata Squash and Carmelized Onions with Farro, leftovers
Friday: Movie night and takeout
