With the whirlwind of activities this past weekend, I almost forgot I have a veggie box to plan and use! The harvest is really in full swing now, and each week, our vegetable box from Two Small Farms (check out their Ladybug Letter) is chock-a-block with outstanding local and organic produce.
This week’s box included Rosemary, Salad Mix, Carola Potatoes, Red Torpedo Onions, Strawberries, Cauliflower, Chard, Red Beets and little tiny Red Onions. Here is my Menu Plan for Monday, July 6:
Monday: Garlic and Rosemary Roasted Potatoes, Halibut skewers (on the rosemary), sautéed Chard, salad
Tuesday: Cauliflower, White Bean and Feta Salad, bread
Wednesday: Roasted beets with goat cheese, grilled onions, grilled sausages
Thursday: Leftovers (or pizza!)
Friday: TGIF Mini-block party
