I was using the biggest turnips, which I thought would be astringent and sour, and the dish turned out very mild and sweet, a really nice accompaniment to the roasted lamb. the turnip gratin was way better than I thought it was going to be! I have all sorts of things in there I hope my kids will eat - watermelon, lemon cucumbers, pole beans, and a couple things I wanted to try, especially tomatillos.
