Sorry for the delay in responding...

Gypsy peppers are smallish, sweet peppers, about 3-5 inches long. When they came to me, they were still yellow, but I understand they also turn green and red. 

In addition to the torta, my other favorite way to eat them was to cut in half, seed them, and then pan roast with a little olive oil until brown bubbles form. Remove from pan and sprinkle with sea salt. Great appetizer!

Hopefully, we will get another batch in our box soon - I saw a suggestion to stuff with quinoa and cheese!
